1. In order to prevent wort infection at the stage of cooking, it is needed to exclude the 3rd HDFT unit out of hydro-fermentation scheme of raw material processing. For starch time liquefaction for capacity of about 50,000l/day, two HDFT units are enough. In case of increase of capacity up to 90,000-10,000l/day, 3 (third) HDFT unit is necessary to be included into the scheme with maintaining temperature modes, identical to the modes of previous HDFT units.
Suggested measure enables to exclude starch retrogradation and improve enzyme activity in terms of its hydrolysis.
The measure shall be implemented by adjustment of EXISTING valves and does not require additional investment.
