Apart from technological benefit of measure implementation, which is excluding the possibility of partial loss of reducing sugar, which turns into caramel under steam treatment at the temperature above 110…150оС and irretrievably dissolves in the following technological processes, the measure implementation enables to refuse from the constant steam supply to the ejector, in other words - reduce consumption of steam and losses of enzymes inactivated by steam treatment.
In case of refusal from using the steam ejector, it is OBLIGATORY to perform periodical local bacteriological decontamination of the mash mixer. Chloride of lime is used as disinfectant. Bacteriological decontamination is to be performed NO LESS frequently than every other day.
